Place the vegetables, onion, coriander, minced garlic, tahini, cumin, chilli, salt, pepper in a food processor and pulse until finely minced. Then add the chickpeas and flour Do not over-pulse – the mixture should be coarse
Use your hands to shape falafel mixture into small balls or patties and place frying pan on a medium heat with enough oil to shallow fry
Fry for 3 minutes, flipping half way, until golden brown and crisp.
For the dressing add the tahini, garlic, lemon and salt to a blender, place on a low speed and slowly add the water until totally combined and creamy
Serve falafel with mixed salad leaves the cool sauce and a warm pita!
