Carrot Cabbage Stir-Fry with Baked Sweet Potatoes

Carrot Cabbage Stir-Fry with Baked Sweet Potatoes

Ingredients:

  • 1 small onion, sliced
  • 2 cups shredded cabbage
  • 2 cups grated carrot
  • 1/2 tsp curry powder
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 1 tsp all-purpose seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Salt to taste
  • 1 tbsp vegetable oil


Method:
1. Heat the oil in a large pan over medium heat. Add the sliced onion and sauté until softened.
2. Add the shredded cabbage and grated carrot. Stir well and cover the pan.
3. Let the vegetables steam in their own moisture for 5-8 minutes, stirring occasionally.
4. Add all the seasonings and mix thoroughly.
5. Continue to cook uncovered for another 5 minutes until the vegetables are tender but still vibrant.
6. Serve hot with baked sweet potatoes or your choice of side.
