200g Watermelon diced
200g Cantaloupe diced
6 Cherry Tomatoes chopped
250g Halloumi
4 slices Ciabatta
1 Red Chilli sliced
Coriander
Mint
2 spring onions sliced
1. Take the melon, Tomatoes, Chilli ,Mint and Spring Onion and toss in a Bowl with a glug of olive oil. Refrigerate for a few hours. The mix should be cold.
2. Heat a non stick pan and brown the Ciabatta on each side, Then set them aside.
3. In the same pan , Cook the halloumi on each side to golden brown.
4. To serve, arrange a spoon of the melon mix on each plate, Place a couple of slices of halloumi on each and add the Ciabatta.
5. A fresh Rose would compliment this dish
