- Mix the marinade ingredients in a large bowl. Add the chicken and toss to coat. Marinade for at least 2 hours, preferably overnight.
When ready to cook
- Preheat the oven to 180°C
- Line a tray with baking paper/parchment paper. Put the chicken on the tray, skin side up. Remove all the marinade from the bowl and brush onto the chicken.
- Roast for 30 minutes. Baste the chicken again with the juice dripping from the chicken for 1 minute. Turn up the oven to 190 °C for 10 more minutes.
- Check / probe the chicken to make sure it’s cooked..
- Leave the chicken to cool for few minutes before serving with jasmine or coconut rice & slaw or simple greens.
