Strawberries in a savory dish, absolutely, these pickled strawberries are a great way to use up the berries that are starting to go slightly soft and also make a dressing from the tops to ensure nothing is Wasted.
Ingredients
250g whole strawberries
150g Soft goats cheese
50g mixed salad leaves
3 1/2 fl oz of red wine vinegar
2 tbsp of sugar
2 sprigs of mint
2 sprigs of fresh basil leaves
4 slices stale bread
100ml pour cream
2 gloves garlic
½ red onion sliced
Method
Slice the tops off the strawberries and place the tops into a bowl, then quarter the strawberries and place into a jar. Sprinkle two tablespoons of sugar over the strawberry tops and leave for about 20 minutes.
Place the vinegar and sugar in a pan and place over a medium heat. Stir until the sugar dissolves then remove from the heat, add the mint and allow to cool.
Pour the cooled pickling liquid over the strawberries and leave for 30 minutes.
Then pour ½ the pickling liquor over the strawberry tops and blend into a dressing, season with salt and pepper
Put the goats cheese into a bowl and add the pouring cream and chopped basil, mix together into a smooth spread.
Heat a pan on a medium heat, add a drop of irish rapeseed oil, place the bread slices into the pan and fry on both sides until golden, remove and rub the garlic onto each slice.
Place the bread onto a plate and spread the goats cheese on top, then add the pickled strawberries, top with salad leaves and thin slices over red onion, dress with the strawberry top dressing and enjoy…..
