Air Fryer Turkey

Serves 6-8

Ingredients:

· 1.8kg Turkey crown

· 200g butter, at room temperature

· 2 tbsp finely chopped sage, parsley & rosemary

· Zest of 1 orange

· Salt & Pepper

Method:

· If you are using a frozen turkey, defrost for 36 hours in the fridge.

· Mix the butter with the herbs, seasoning and zest and fully combine.

· A few hours before cooking, or the night before, dry the turkey with kitchen paper and use your hands to gently loosen the skin away from the meat.

· Rub the butter onto the flesh underneath the skin and keep some to rub on top of the skin also, pop it back into the fridge.

· Remove from the fridge 30 minutes before cooking.

· Preheat your air fryer to 180c on the air fry setting.

· Place the prepared turkey crown into the basket and cover loosely with foil.

· Air fry for 50 minutes, then remove the foil, baste and cook for a further 25 minutes until the internal temperature reaches 75c. The general rule is 20 minutes per 500g plus 20 minutes plus resting time.

· Once the thickest part of the breast has reached 75c, remove from the air fryer, cover with foil and leave to rest for 20-25 minutes.

· Then slice and enjoy.
