Ingredients
8 Baby Potatoes, Cooked , Peeled and Sliced
3 Boiled eggs in quarters
2 Baby gem Heads
28g Black olives
280g Tuna fresh
2 Plump ripe tomatoes in quarters
5g anchovies chopped
10ml Sherry vinegar
1 spoon Dijon
100ml Ev oilve Oil
1 egg yolk
1 garlic clove mashed
Instructions
1. Heat a frying pan until its very hot. Add some oil and sear the Tuna on both sides for one minute. It should be golden brown on the outside and nicely red on the inside. Remove from the pan and place on a plate to rest.
2. Make the dressing by Placing all the egg yolk, dijon , Vinegar and garlic in a bowl. Whisk in the olive oil slowly , then add the Anchovies
3. Add the rest of the Salad ingredients into the bowl and toss gently
4. To plate, Arrange the salad in a nice serving dish. Slice the tuna in the sizes you want and arrnage on top of the Salad.
