Coconut Chili Chicken
Ingredients:
- 2 Chicken Thighs or 1 Chicken breast (cut into chunks)
- 1 tbsp Vegetable Oil
- 1 Shallot, slices
- 1 thumb size piece of fresh Ginger (thinly sliced)
- 1 chili thinly sliced
- 1 stalk Lemongrass, bruised
- 2 tsp Chilli Herb Paste
- 4 cups Chicken Broth Stock
- 3 tbsp Fish Sauce
- 1 tbsp Light Brown Sugar
- Handful chopped Green Beans
- 2 Lime Leaves
- 2 tbsp fresh Lime Juice
- 1 cup of coconut milk
For garnish:
- Handful mint
- Chopped chili
- Crispy shallots
- Chopped spring onion
- Thai basil
Method:
1. Heat the oil in a saucepan over medium heat.
2. Add in the ginger, lime leaves, lemongrass, shallot, chili paste and stir in the heated oil for 1 minute.
3. Add in the chicken, and fry for 1 minute until spices and chicken well coated.
4. Slowly pour the chicken broth over the mixture, stirring continuously
5. Add in the fish sauce, green beans and simmer for a few minutes.
6. Pour in the coconut milk and bring to boil and simmering a little bit.
7. Finally add in the lime juice and season to taste with fish sauce and sugar.
8. Bring it to a boil.
9. Add in the Thai basil & grated lime leaves.
10. Serve with Thai Jasmine rice.
