Roasted Spiced Cauliflower with Strawberry Salad

Roasted Cauliflower with Strawberry Salad—perfect as a light main or colourful side. The warm, spiced cauliflower contrasts beautifully with the sweet-tangy freshness of the strawberry salad. Think Indian spice meets summer garden

Ingredients

For the Roasted Cauliflower:

  • 1 medium cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • 1 teaspoon garam masala
  • ½ teaspoon chilli flakes or powder (optional)
  • Salt and pepper, to taste
  • Juice of ½ lemon

For the Strawberry Salad:

  • 1 cup fresh strawberries, hulled and sliced
  • 2 cups mixed salad leaves (rocket, spinach, baby gem, etc.)
  • ½ small red onion, finely sliced
  • 1 small cucumber, diced or ribboned
  • Small handful mint leaves, chopped
  • Optional: feta cheese crumbles or toasted pumpkin seeds

For the Dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Salt & pepper to taste

Instructions

1. Roast the Cauliflower

· Preheat oven to 200°C (390°F).

· In a bowl, toss cauliflower florets with olive oil, cumin, turmeric, garam masala, chilli (if using), salt, pepper, and lemon juice.

· Spread on a baking tray and roast for 25–30 minutes, turning halfway, until golden and slightly crispy at the edges.

2. Make the Salad

· In a large bowl, gently toss together the strawberries, salad leaves, red onion, cucumber, and mint.

· Whisk together dressing ingredients and drizzle over the salad just before serving.

3. Assemble

· Serve warm roasted cauliflower on a platter or shallow bowl, topped with the strawberry salad.

· Add a final drizzle of dressing and a scattering of feta or seeds if using.

Serving Suggestions:

· Pair with grilled halloumi or flatbreads for a full meal.

· Add chickpeas or lentils for extra protein.

· Perfect as a BBQ side or light summer lunch!
