Orecchiette with ‘Nduja & Tomatoes

Orecchiette with ‘Nduja & Tomatoes

This dish is from southern Italy ( Calabria). ‘Nduja is a little spicy but the cream helps to mellow it. It’s a perfect dish for a warm summer evening and quick and easy to prepare.

Ingredients:

  • 260g Orichiette
  • 1 Red Onion sliced
  • 120g Cherry Tomatoes
  • 50g ‘Nduja
  • 50ml White Wine
  • 80ml Cream
  • 50g Rocket chopped
  • Freshly grated Pecorino

Method:

1. Place a pot of salted water on the stove and bring to the boil

2. In a preheated frying pan saute the onion and tomatoes in oil for 3 minutes

3. Crumble the ‘nduja into the pan and add the white wine. Then add a ladle full of water from the pot and let it bubble away.

4. Cook the Orecchiette in the water for 3 minutes

5. Meanwhile add the Cream to the Pan .

6. Strain the Pasta and add to the pan to continue cooking

7. Finally add the Rocket and Cheese

8. Portion Between 2 plates , Serve with a crisp dry white wine
