Rustic Smoky Potato Pottage with Seared Steak Strips

Ingredients: • 2 kg potatoes, peeled and diced (some smaller for texture) • 2 tbsp smoked paprika • 1 medium onion, finely chopped • 2 sweet pointed peppers, chopped • 1 tsp black pepper • 1 tsp garlic powder • 2 tbsp all-purpose seasoning • 2 tbsp vegetable oil • Salt to taste
Method: 1. In a large pot, heat the oil and sauté the onions until soft and translucent. 2. Add the chopped sweet peppers and smoked paprika and Stir. 3. Add diced potatoes, seasoning, garlic powder, and black pepper. Stir well. 4. Add just enough water to come just below the top layer of potatoes. 5. Cover and simmer on medium heat until the potatoes are tender. 6. Stir well to break down the smaller potato pieces and create a thick, hearty texture. 7. Adjust salt and pepper to taste.
