Fillet of Beef with Ginger & Spring Onion
Ingredients:
• 450g fillet or sirloin beef, thinly sliced against the grain
• 1 tbsp vegetable oil
• 3 spring onions, cut into 5cm pieces
• 1 thumb-sized piece of ginger, peeled and thinly sliced
Sauce:
• 2½ tbsp oyster sauce
• ½ tsp light soy sauce
• 1 tbsp sesame oil
• ½ tbsp sugar
• ¼ tsp salt
• ¼ tsp white pepper
• 2 tsp potato starch or cornflour, mixed with 1 tbsp water
Method:
1. Mix all the sauce ingredients in a small bowl and set aside.
2. Heat a wok or large frying pan over high heat with the vegetable oil.
3. Add the sliced ginger and stir-fry for 10 seconds until fragrant.
4. Add the beef and stir-fry for 30 seconds.
5. Pour in the sauce and stir for another 30 seconds.
6. Add the spring onions and cook for 30–60 seconds more, just until the beef is cooked through and the sauce has thickened.
7. Remove from heat and serve immediately. With rice of your choice
