Honey Glazed Salmon Bite Bowl with Spicy Mayo Dressing

Ingredients:

For the Salmon Bites:
  • 2 salmon fillets, skinless, cut into bite-sized cubes
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sriracha (optional for extra heat)
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • ½ tsp ginger, grated
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp cornstarch (for crispiness)
For the Spicy Mayo Dressing:
  • ¼ cup mayonnaise
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp honey
  • 1 tsp rice vinegar
  • ½ tsp sesame oil
For the Bowl Base:
  • 1 cup cooked jasmine rice (or brown rice)
  • ½ avocado, sliced
  • ½ cucumber, thinly sliced
  • ½ cup shredded carrots
  • Edamame beans 
  • Red onion, pickled preferably 
  • 1 tbsp sesame seeds
  • 1 tbsp green onions, chopped

Instructions:

  1. Prepare the Salmon Bites:

    • In a bowl, mix soy sauce, honey, sriracha, sesame oil, garlic, ginger, black pepper, and paprika.
    • Add the salmon bites to the marinade, coating evenly. Let sit for 10 minutes.
    • Toss the marinated salmon in cornstarch to create a crispy texture when cooked.
  2. Cook the Salmon:

    • Heat a non-stick pan over medium heat.
    • Cook the salmon bites for 2-3 minutes on each side until caramelized and cooked through. Remove from heat.
  3. Make the Spicy Mayo Dressing:

    • In a small bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, and sesame oil.
  4. Assemble the Bowl:

    • Add a bed of rice to a bowl. Arrange the avocado, cucumber, shredded carrots, and cooked salmon bites.
    • Drizzle with spicy mayo and sprinkle with sesame seeds and green onions. Garnish with nori strips if desired.
