Lobster Taglioni, Roasted Cherry Tomato Cream & Basil

Ingredients:

200g Taglioni Pasta, Fresh if you can get it.

1 Lobster 400g

300g Red & Yellow Cherry Tomatoes

50ml Fresh Cream

Garlic Puree

Red chilli Chopped

Fresh Basil

Olive oil

1 Lemon

 

Method:

 

  •  Put On a large Pot of salted water and Bring to the boil.
  •  Cook the Lobster for 9 minutes then remove with a tongs.
  •  Remove all the meat from the shell using a scissors and set aside on a plate.
  •  Preheat your oven to 220c. Wash the Cherry Tomatoes keeping them whole. Place them in an earthenware dish , sprinkle with Olive Oil , salt and Pepper then place in the oven.
  •  You have to cook the Tomatoes until they are a dark colour, 25 mins.
  •  Place another Pot filled with salted water on the range . Add the pasta and cook for 3 mins.
  •  In a separate high sided Frying pan fry the Lobster meat Gently in Oil.
  •  Remove the Tomatoes from the oven and break up with cream. Just mix it to combine.
  •  Add the Garlic and chilli to the lobster and a squeeze of Lemon,
  •  Pour on the Tomato cream then add the pasta
  •  To serve finish with the fresh Basil
