This is a pouring custard that is wonderful over puddings, tarts, fresh berries or crumbles.
Ingredients:
200 g caster or granulated sugar
4 beaten eggs
25 g self-raising flour
pinch of salt
725 mls scalded milk
250 mls heavy cream
10 mls vanilla
60 mls bourbon
Method:
In top of double boiler, combine the sugar, beaten eggs, flour, and salt.
Place mixture over boiling water and slowly add milk and cream. Stir constantly until the mixture coats the spoon, about 30-45 minutes. It will start to steam.
Remove from heat, then add vanilla and bourbon. Refrigerate. It will thicken as it chills.
