INGREDIENTS
• 4 Boneless Skinless Chicken Breasts cut into strips
• 3 Eggs
• 100g cornflour
• 100g flour
• Oil for frying
For the Sauce:
• 250ml Orange Juice
• 100g sugar
• 2tbsp Rice Vinegar
• 2tbsp Soy Sauce
• Grated Ginger
• 1tbsp cornflour
• Garnish: Sliced spring onions, sliced chilli, cooked rice of choice
METHOD
1. Start by making the sauce. Add all the ingredients into a saucepan bring to the boil and simmer for 5 mins to infuse. Thicken with cornflour and set aside
2. For the chicken whisk the eggs together in one bowl. Add the cornflour and flour together in another bowl
3. Place the chicken into the flour mixture then into the egg mixture and then back into the flour mixture
4. Deep fry in some oil until crispy and cooked
5. Once cooked toss the chicken in the sauce and serve with the rice, chilli and spring onion
