Green Tortillas with spiced veg and bean hummus.
This is a great way to use up greens and vegetables that are lurking in the back of your fridge, a great way to start the week and use up those leftovers from the weekend
For the wraps:
250g spinach leaves
2 free range eggs
For the veg:
½ onion
½ pepper
½ aubergine
½ courgette
1 glove garlic
2 tsp chilli powder
1 tsp ground coriander
Hummus:
1 tin butterbeans
½ jar tahini paste
1 glove garlic
Method:
For the tortillas place the spinach leaves and eggs into a blender and blend until it’s a fine batter. Add a drop of rapeseed oil to a warm pan and pour in enough batter to cover the pan. Cook on one side and then flip over onto the other side, cook for 1 minute and set aside. Do this in batches until all cooked.
Add another drop of oil to the pan and add the diced onion and chopped garlic, cook for a minute and then add the chilli powder and coriander, stir and cook for another minute. Then add all the other vegetables diced. season and stir, cook for another minute.
For the hummus, drain the butter beans and add to the blender, blend until smooth then add the chopped garlic and the tahini, blend again into a smooth paste, season with salt and pepper.
Place your tortilla on a plate and spread copious amounts of hummus over it, then top with the roasted vegetables. I finish with natural yogurt and fresh coriander….. enjoy
