Upside Down Caramel Apple Cake


 Apple Topping:


  • 85g unsalted butter
  • 100g packed light or dark brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 2 medium apples

Cake Batter:

  • 188g all-purpose flour 
  • 1.5 tsp baking powder
  • 1 tsp  cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 115g unsalted butter, softened 
  • 100g granulated sugar
  • 100g packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • 90ml whole milk 


- Mint leaves 

- Toasted almonds 

- Fresh Cream 



1. Preheat oven to 180 oC

2. In a small saucepan, add the butter and sugar and melt over medium heat, stirring occasionally once the butter is melted. Once a thickened caramel is formed, add the cinnamon and vanilla extract. 


3. Pour the caramel into the cake dish or pan and spread over the base. Place the sliced apples into the caramel around the base. 


4. For the cake batter: beat the sugar and butter together and slowly add the eggs. Add the the dry ingredient to the wet and slowly mix, adding the milk in here.


5. Pour the batter over the apple and caramel in the cake tin and bake in the oven for 45-50 min until the cake is fully cooked. 


6. Remove, all to cool slightly and invert on a cake stand. Top with some fresh cream, toasted almonds and mint leaves.
