Preparation is key. Prepare everything in advance and then cook.
Garlic Butter / Compound Butter : Peel and finely mince the garlic, mash together the butter, parsley and garlic. Season with salt and black pepper. Roll in cling film or parchment to make a cylinder shape or just put in a bowl until needed.
Beef: Bring the steaks to room temperature. Brush the steak with oil. Season with black pepper. Cover until needed. Using a small knife cut a slit in the back on the prawns from top to bottom.
Truffle Fries: Peel and slice the potatoes into chips. Par-cook for about 3/4 minutes. Drain in a colander and allow to sit.
Heat the oil until it reaches 160?. As the oil heats, grate the parmesan and in a large bowl, combine the truffle oil, parmesan cheese and black pepper.
Put the chips in the hot oil and deep fry.
Cooking Time : Heat up a griddle pan and a frying pan. When the griddle pan is hot, place the steak down and hear that sizzle. Allow the beef to cook for at leat 3 - 4 minutes before turning it. Flip over and cook the other side. Remove from the pan, wrap in foil and allow to rest.
At the same time, over a medium heat, melt the garlic butter in the other pan. Toss in the prawns and cook for about 5 minutes until pink and fully cooked.
Remove the chips from the oil, drain well on kitchen paper and then toss in the oil, parmesan and black pepper.
Sit the beef in the centre of the plate, top with the garlic butter prawns and garnish with a sprig of rosemary.
Serve the truffle fries in a dish beside them and garnish with a final touch of parmesan, black pepper, parsley and a shaving or two of truffle.
