Susan Jane White's recipe for Tofu Mince
(serves 2-3)
Ingredients:
300g extra firm tofu
3 tablespoons sesame oil
3 tablespoons maple syrup
3 tablespoons soya sauce
Method:
1. We need to squeeze our tofu dry. This will ensure each bit of tofu will drink up the crazy-delicious marinade. To do this, place your block of tofu in a clean tea towel and pop onto a large plate. Find something heavy like a casserole pot, and weigh down the tofu. Leave for 30 minutes.
2. After 30 minutes, remove your weight and discard all the tofu juice collecting on the plate underneath. The towel will have soaked up lots of juice too - throw this in the laundry!
3. Coarsely grate the tofu. Feel free to tear the final pieces as it gets trickier to grate towards the end.
4. Pour the sesame oil, maple and soya sauce into a jar and shake it. Shake it like a polaroid picture. Drizzle over your grated tofu until every last piece is glistening.
5. Roast in a preheated oven at 200C for 10-15 minutes or until the edges start to crisp and caramelise. Remove from the oven and serve in tacos or Little Gem lettuce leaves.
