Ingredients
· 4 cod fillets -skinned
· 400g French beans
· 4 teaspoons mayonnaise
· 4 teaspoons wholegrain mustard
· 4 teaspoons honey
Mix all these together in a bowl
· 200g mussel meat
· 1 shallot peeled and diced
· 100ml sherry vinegar
· 50ml olive oil
· 1 tablespoon chopped dill
· 2 tomatoes peeled and diced
· 1 garlic clove sliced
· 1 lemon zest and juice
· 1 tablespoon chopped parsley
Method
1. Mix the sherry vinegar and olive oil, dill, parsley, tomatoes, garlic, lemon and season with salt and pepper. Pour dressing over the mussel meat.
2. Toss the French beans with 50g butter over a high heat, add the mustard dressing and season.
3. Heat a pan, add a little vegetable oil, season cod fillets and place on pan over moderate heat. cook for 3 mins and turn, cook for a further 3 mins.
4. Place beans on plate, put cod on top and spoon over mussel vinaigrette.
