Leftover Roast Ham and Turkey Egg Fried Rice

Ingredients

  • 500g cooked, cold rice
  • 150–200g leftover roast ham, diced
  • 100g leftover roast turkey, diced
  • ½ sweet onion, finely diced
  • 3 spring onions, sliced
  • 3 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • Salt, to taste

Method

  1. Heat a wok or large frying pan over high heat.
  2. Add the diced ham and turkey, frying until lightly crispy. Remove and set aside.
  3. In the same pan, sauté the sweet onion until soft and fragrant.
  4. Add the cold rice, breaking it up, and stir-fry until heated through.
  5. Push the rice to one side, add the beaten eggs, scramble gently, then fold through the rice.
  6. Return the ham and turkey to the pan.
  7. Add soy sauce and oyster sauce, toss everything together, and cook for another minute.
  8. Finish with spring onions and season lightly with salt if needed.
