I stick the cloves in the apple slices. Add all ingredients to a saucepan. Heat gently for 15–20 minutes until fragrant. Do not boil. Serve warm.
Christmas Whiskey Sour
Ingredients
50ml Irish whiskey
2 tbsp fresh lemon juice
2 tbsp fresh orange juice
1 tbsp loosened honey
1 egg white
Ground cinnamon
Ice
Edible gold spray for garnish
Method
Add whiskey, lemon juice, orange juice, honey, egg white and a pinch of cinnamon to a shaker. Dry shake (no ice) for 10 seconds. Add ice and shake again until well chilled. Strain into a glass and finish with gold spray.
Salami & Cheese Pinwheels
Ingredients
1x Ready-rolled puff pastry
2 tbsp wholegrain mustard
100g Salami (thinly sliced)
100g Grated cheese
1 Egg for wash
Salt & pepper
Parsley for garnish
Method
Unroll the pastry, spread on the mustard and layer with salami and grated cheese. Roll tightly and slice into rounds. Brush with beaten egg. Bake at 180°C for 15-18 minutes until golden.
Whipped Feta with Spiced Nuts & Jalapeños
Ingredients
1 block Feta cheese
100g thick Greek yogurt
50g Mixed nuts
50g Butter
1 teaspoon paprika
1 teaspoon smoked paprika
½ teaspoon ground cumin
1 tablespoon Honey
20g Pickled jalapeños, chopped
Method
Blitz feta with yoghurt until smooth and creamy. You may need to add some water. Spoon into a serving bowl and swirl the top. Toast nuts in a dry pan, then add in butter, paprikas, cumin and honey and toast until glossy and fragrant. Spoon warm nuts over the feta, scatter over finely chopped jalapeños. Serve with crackers or crisp breads.
