Ingredients:
· 600g Diced Beef
· 200ml Thick Brown Gravy
· 150ml Beer
· 250g Chopped Chestnuts
· 150g Diced Smoked Bacon
· Onion Peeled and diced
· Carrot Peeled and diced
· Clove of Garlic Crushed
· Bay leaf
· Teaspoon of chopped thyme
· Table spoon of Tomato Paste
· 4 Large Potatoes peeled & sliced, and blanched in boiling water for 3 minutes
· Table spoon of melted butter
· Table spoon of Worchester sauce
Method:
1 Heat an ovenproof dish over a high heat. Add a little vegetable oil and add the diced beef.
2 Toss and sauté for 2 minutes. And add the bacon and toss again.
3 Add the onion, carrot, garlic and sauté and then add the tomato paste, the bay leaf, thyme, chestnuts, and the Worchester sauce and toss again.
4 Then add the gravy and the beer. Season and simmer for 10 minutes. Then cover the dish with the sliced potatoes and season.
5 Place the dish in the oven @ 160/170 degrees for 1.5 hours or until potatoes are golden brown and crispy.
