Ingredients: (Serves 4)
400g Raw peeled and deveined prawns
3 Cloves of garlic (Finely chopped)
Small piece of ginger (Finely chopped)
1 Small bunch of coriander (Chopped)
2 Red chillis (Finely chopped)
20g Peanuts (Chopped)
1 Tbsp sunflower oil
1 Tsp honey
1 Tbsp soy sauce
1 Tbsp curry powder
3 Tbsp smooth peanut butter
150ml Coconut milk
Juice of 1 lime
Method:
Prawns –
Place the prawns in a bowl, now add the garlic, ginger, oil, half the chilli, and lime juice, and mix well until they are well coated. Leave the prawns to sit in the marinade for 5 minutes. Next use wooden skewers and place 3 prawns on each skewer. Once all your prawns are skewered, place a heavy pan on a medium high heat, and place your prawns on to cook. They will only need 90 seconds on each side, you will know they are done when the prawns are firm and white.
Satay Sauce –
Simply place the soy sauce, honey, peanut butter, curry powder, and coconut milk into a small pot, and heat gently until it’s all combined. Taste and add more honey if you want it a bit sweeter.
To Serve:
Serve the skewers on some plain boiled rice, then pour over some of your satay sauce, and to finish, sprinkle coriander, the remaining Chilli, and your chopped peanuts on top. Enjoy
