200g grated mature cheddar (1/2 mixed in and 1/2 on top)

METHOD
1. Preheat oven 180C - bake for 20-25 min until golden and just set.
2. Line the cake tin with a piece of parchment paper or brush lightly with some oil, then push the tortilla wrap down into the tin.
3. In a jug or bowl, beat the eggs, then add in the cottage cheese, courgette, ham, spring onions, chilli flakes, peas, half the cheddar and mix well and add a good crack of salt and black pepper.
4. Pour the mixture into the tin with the wrap and then top with the remaining grated cheddar.
5. Bake for about 20 minutes until golden and puffy.
6. Serve with a salad or on its own. Half of the quiche has 40g of protein.
Top tips:
1. The cottage cheese can be flavoured like chive is good.
2. You can add other veg like tomatoes, spinach, onions, mushrooms etc cut up veg to same size so they cook evenly.
3. However- if you have LOTS of veg .. best to fry them off first for about 5 min to sweat them down so excess moisture can evaporate .. otherwise, the quiche base will be soggy!!
4. Mix up different cheeses to give it a different flavour profile like a blue cheese
5. Different fresh herbs are great - parsley, thyme, garlic etc work well.
