Drop the wings into a large pot of boiling water for 2 minutes. This tightens up the skin, and helps them get extra crispy when baking.

Next, thoroughly dry the wings with kitchen paper, and let them go cold, its really important that you dry them completely.

Once cool and dry, place them in a large bowl, now add your spices, salt and pepper, and oil, and mix well until they are completely coated.

Once coated, place the wings on a tray lined with baking paper, making sure the wings have plenty of space between them.

Now place in a fan oven at 180 degrees for roughly one hour, but keep an eye on them, let them go golden and crispy.

After an hour, turn them all over and leave to crisp on the other side.
