Beef & Red Wine Stew
Serves 4 and comes in at €3.50 per serving! Also great for the freezer & leftovers
You need:
How:
1. Preheat oven to 150 and brown beef in batches until nice and brown on all sides.
2. Remove meat and to the same pan add your veg and sweat for 5-8mins
3. Re-add your meat and season well with salt, pepper, flour, garlic & herbs. Cook off the flour for 2-4 mins
4. Add beef stock, wine & tomato purée and when thickened and smelling delicious bake in oven for 2.5-3hrs
5. Cook mushrooms in butter until water evaporated and golden and add to the stew with fresh parsley
6. I served mine with mashed potato!
