Ingredients: (Serves 2)
150g Fresh Prawns (shelled)
150g Cooked noodles (use any noodles you like, thicker ones are preferable)
100g Bok Choy
2 Pints of chicken stock
2 Cloves of garlic finely sliced
1 Half red chilli chopped
1 Tbsp sliced fresh ginger
1 Large spring onion shredded length ways
2 Tbsp soy sauce
2 Tbsp oyster sauce
Salt & white pepper to taste
Method :
Put a pot on a medium heat, and add the chicken stock. Bring the stock to a gentle simmer and the
chilli, garlic, and ginger, and leave to cook for 2 minutes.
Now add the soy sauce, oyster sauce, and taste. Season your broth if necessary. Next add your
cooked noodles, prawns and bok choy. When the prawns have turned white/pink and are firm, your
bok choy will have softened, and the noodles will be fully heated through. Remove from the heat
after a further minute, your soup is now ready to serve.
To Serve:
Simply ladle the soup into bowls and garnish with your thinly sliced spring onion.
