Mini Pineapple Upside Down Cakes

What you need

· 175g self-rising flour

· 125g sugar

· 125g butter

· 2 eggs

· 2 tbsps. cold water

· Pinch salt

Topping:

· 425g Tin Pineapple Rings (drained) Keeping back some juice for cherries to decorate.

· 50g/2oz Butter

· 50g/2oz Brown Sugar

Recipe Steps

1. Pre heat oven to 190°C/350°F/ Gas 4. Lightly grease a 2 pint casserole dish tray with 25g of butter.

2. Sprinkle sugar over the base.

3. Arrange pineapple rings on top. Place cherry into corners of each tray.

4. Use all in one method: put your flour, butter, sugar, eggs, water or juice and salt into a bowl.

5. Beat well until mixture is creamy and smooth. Pour into prepared dish.

6. Bake for 25 to 30 minutes, until well risen and springy to the touch.

7. Cool for 5 minutes.
