Method:
1) Sweat tomato’s & finely diced onion in some olive oil until tomatoes are breaking down & soft.
2) Add your chopped garlic & 1/2 tube tomato purée. Season with salt, pepper & chilli flakes.
3) Add a glass of your favourite rose wine and cook on high until the alcohol is burnt off (about 5mins)
4) Add about 100ml cream, fresh basil & handful of Parmesan cheese. Stir together
5) Add in your pasta cooked according to packet instructions. Add a little of the pasta water if it’s looking a little dry.
6) Serve with some extra Parmesan and chilli flakes on top!
