Smoked Salmon & Prawn Frittata with Feta, and Cherry Tomatoes
Ingredients:
5 Medium Free Range Eggs
80g Large Raw Peeled Prawns
80g Smoked Salmon
100g Cherry Tomatoes
100ml Olive Oil
50g Feta Cheese
4 Chopped Spring Onions
Handful of Rocket Leaves
Juice of 1 Half Lemon
Salt & Pepper
Pinch of Dried Chili
Instructions:
1. Place a large frying pan on a medium heat and add some of your olive oil.
2. Next add the dried chili, spring onions, and cherry tomatoes, and allow to soften for a minute.
3. Crack your 5 eggs, whip the eggs well, then add to your pan.
4. Immediately add your prawns and smoked salmon, make sure to spread them evenly throughout the pan.
5. Then sprinkle the feta cheese over the mixture, again, making sure to do so evenly.
6. Season lightly with salt and pepper, and allow to cook for roughly 2 minutes, or until the mixture begins to just set.
7. Next, place your oven on the grill setting, at about 200 degrees.
8. Place your pan under the grill, you can leave the handle sticking out if it doesn’t fit, as you just want to finish cooking, and brown the frittata.
9. This should take no more than 2 minutes, but keep an eye on it, and when it begins to puff up and turn golden brown, remove it from under the grill.
To serve:
1. Mix your rocket leaves with some olive oil, salt and pepper, and the lemon juice.
2. Then slide your frittata onto a large plate. (it should come out of the pan easily once you push it from the edges of the pan).
3. Place your dressed rocket on top of the frittata, and serve in the middle of the table, allowing people to help themselves.
