2. Grease an 8” round baking dish with some of the melted butter.
3. Sprinkle the berries with half of the brown sugar and mash them up a little bit to get a chunky porridge consistency. Set aside.
4. In a large bowl, whisk together the remaining brown sugar, melted butter and milk. Add the flour and baking powder and continue to mix until just combined. Pour this batter into the greased baking dish and spread it evenly.
5. Spoon the strawberry mixture over the batter.
6. Bake for 25 minutes, until just set.
7. Cool for 5 minutes before spooning into serving bowls. Serve with a scoop of ice cream and a sprinkle of pistachios.
