Apple Crumble and Best ever Custard

INGREDIENTS

  • 700g / 1 1/2 Ib Bramble Cooking Apples
  • 50g / 2 oz Sugar
  • 2 Tablespoons Water
  • Pinch Cinnamon

Crumble

110g / 4 oz White  Flour

50g / 2 oz Butter

50g / 2 oz Caster Sugar

Custard

600ml / 1 pint Full Fat Miljk

Vanilla pod

6 egg yolks

50g / 2 oz Sugar

Method

  1. Stew the apples with the sugar and Water in a saucepan until half cooked
  2. Next taste and add more sugar if needed
  3. Pour mixture into pie dish and sprinkle over cinnamon and leave to cool while you make the crumble topping
  4. Rub the butter into the flour until it resembles course breadcrumbs
  5. Add the sugar and then spoon  over the apples in the pie dish until all apple mixture is covered
  6. Bake for 35-40 minutes in preheated oven or until the top is fully cooked and Golden brown in colour
  7. Remove from oven and leave to cool slightly
  8. To make the custard bring  milk in a saucepan to the boil with vanilla pod
  9. Beat the egg yolks with sugar until thick and white
  10. Whisk in half the hot milk and then mix the mixture back into the hot milk in saucepan
  11. Cook over very low heat stirring consistently with a wooden spoon until the mixture thickens slightly
  12. Remove from the heat and strain , cool slightly and  serve with crumble
