Recipe for Bang Bang Chicken

Ingredients:
3-4 chicken breasts diced
2 eggs whisked
100g of panko breadcrumbs (or you can use corn flakes crushed or regular breadcrumbs)
1 tbsp lemon pepper (or just salt and black pepper)
1 tsp garlic granules
1 tsk paprika
The Bang Bang Sauce
100mls Sweet Chilli sauce
1Tbsp Sriracha Sauce
1Tbsp Peanut Butte
1Tbsp Mayo
1Tbsp Honey
1 Lime (squeezed in)
Method:
On 2 plates/bowls add the breadcrumbs (mixed with the spices) to one and the whisked egg to the other
Then coat your chicken: dunk into the egg and then into the breadcrumbs - repeat until all the chicken is nicely coated
Lay out on a baking sheet with a spray of oil and pop into a preheated oven at 200° for 20 mins until golden and brown turning halfway through
*To Airfry - pop into the airfryer with a light spray of oil at 180° for 10-12 mins or until golden and brown, shaking halfway through
While the chicken is cooking add all the sauce ingredients into a large bowl and stir together
Remove the cooked chicken and toss into the bowl of Bang Bang sauce and coat it thoroughly
Serve with rice and garnish with sesame seeds, fresh chilli and scallion
