1. Place the beef mince, panko, miso, soy sauce and honey in a large bowl and mix well together using your hand.
2. Separate the beef mince into 4 equal balls. Using your hands or a patty maker, shape the beef into flat patties. Use your thumb to make an indent in the centre of each patty (this will help the burgers to keep their shape during cooking).
3. Brush the patties with oil and place them on a pre-heated BBQ grill for about 10 minutes, turning once. Check if cooked to your liking before eating.
4. Serve in a brioche bun topped with miso mayo, pickled cucumber, lettuce and tomato slices.
