1 tbls olive oil
½ small onion, thinly sliced into half moons
1 small fresh red chilli, thinly sliced
4 thin slices of cooked ham, thinly sliced into strips
4 large eggs
8 corn tortillas, warmed
Salt to taste
METHOD:
1). Heat the olive oil in a non stick pan to medium high heat; add the onion and chilli and cook for a minute or until the onion is translucent and the chilli slices have soften. Follow by adding the ham and cook for a further minute stirring regularly.
2). Add the eggs and lower the heat to medium low. Using a rubber spoon or spatula, mix the eggs to incorporate them to the rest of the ingredients. Season with salt to taste. Cook the eggs to your taste.
3). When the eggs are done, take a generous spoon into a warm corn tortilla and enjoy them as tacos.
