1. Place a wok or a large non-stick pan onto a medium to high heat. 2. When that pan gets nice and hot add the oil followed carefully by the chicken wings. Regularly toss the chicken in the pan while they brown up. 3. When the chicken is nice and brown add the garlic, ginger, star anise, cinnamon and chilli. 4. Toss all the ingredients together and cook until all those lovely flavours get nice and fragrant. 5. Now add the soy sauce, oyster sauce, sugar and add enough water to just barely cover the wings. 6. Simmer the wings for 30 to 40 minutes, but keep an eye on the pan and add a dash of water ever now and then if the sauce begins over reduce. 7. Sacrifice one of the wings to make sure they are cooked. 8. If cooked increase the heat until the sauce reduces into a sticky glaze, now add the scallions and toss into the wings. 9. Add a splash of lime juice and zest to the pan now pour the wings into serving platters and garnish with a dusting of sesame seeds and coriander.
