For the Bacon Burgers:
INGREDIENTS:
1 brioche bun
6oz beef burger patty
1 slice white cheddar cheese
60g Bacon Jam
5 ml olive oil
Pinch of sea salt
Pinch of cracked black pepper
For the Onion Relish
500g red onions sliced
300ml red wine
150g white sugar
For the Herb Brush
1 bunch of thyme
Butcher string
Wooden spoon
50g butter
METHOD:
1. To start the BBQ, light the charcoal using a fire lighter and fire starter and get the charcoal hot. Wait until the charcoal has gone white. Place 400g of wood chips or a piece of wood next to the charcoal. If you are using wood chips, soak them in water for 30 minutes before using.
2. When adding the charcoal, place a small amount to one half of the BBQ and the other half leave empty. This is known as the cool side. Place the BBQ lid on top.
3. Preheat the BBQ grill to 140oc.
4. Make the herb brush using the wooden spoon, placing thyme on the handle and tie tightly with the butcher string.
5. Place the butter in a pot. Melt and place the Herb Brush inside.
6. Season the burger patty with a pinch of sea salt and black pepper, drizzle and rub the burger with olive oil.
7. Ensure the grill is hot and also the grills are clean. Place the beef burger patty on the grill and cook, once you get the grill marks turn the burger and brush using the herb brush and butter.
8. Cook the burger for 4-5 minutes each side, until the burger is cooked well to 75oc.
For the Onion Relish:
To make the onion relish place the sliced red onions and all the ingredients into a medium size pot. Cook for about 15-20 minutes on a medium to low heat until the onions are soft and the red cooking wine is reduced by three quarters.
To Serve:
1. Heat the Bacon Jam up in a small pot and bring to a light simmer.
2. Once the burger patty is cooked, place the sliced cheese on top and melt.
3. Lightly toast both sides of the burger bun on the grill.
4. Place the onion relish on the bottom half of the bun, then place the burger with melted cheese on top.
5. Now for the really delicious part! Load the bacon jam on top of the melted cheese and finish off with the top of the brioche bun. Enjoy!
