ALBERTO ROSSI’S APPLE STRUDEL
Ingredients:
150 gr Plain Flour
70 gr Water
1 egg yolk
1 TBL Spoon oil
Pinch of Salt
1 TBL spoon white wine vinegar
Instructions:
Mix all ingredients to form a dough; kneed it on a table for 2-3 minutes. Rest in the fridge 30 minutes.
Ingredients for the filling:
3 Bramley apples, peeled and sliced
Zest of 1 lemon
1 TBL spoon ground cinnamon
40 gr Toasted Pine Nuts
50 gr golden raisins
100 gr breadcrumbs
2 TBL spoons of sugar
40 gr butter
1 egg yolk (for brushing)
Instructions:
To Assemble:
1) Take the dough from the fridge, put flour on a surface and with a rolling pin, pull the dough into a rectangular shape. The dough will be quite elastic, so you have to make sure it is quite thin!
2) Once that is ready, sprinkle the toasted breadcrumbs on the dough, leaving about 1cm from each side; add the apple mix on the dough, over the breadcrumbs. Do not add all the juice from the apple mix!
3) Any left-over breadcrumbs can be added on top of the apple mix.
4) Now, you will need to roll the strudel; roll it nicely and tight. Once done, transfer it to an oven tray and brush the egg yolk on top of it. With a knife score the strudel 3 times.
5) Cook at 180 C for 30 minutes.
6) Serve with Ice cream or Whipped cream.
