Pan fried black sole with caper and lemon butter

If you fancy a fish dish for tonight's dinner, then Fishmonger George Stephens has just the thing for us this morning - pan fried black sole with caper and lemon butter.

Pan fried black sole with caper and lemon butter

2 Black Sole
6 tbsp flour
3 tbsp olive oil
100g butter
Juice of half a lemon
2 tbsp of capers
2 ts of chopped parsley and chive
1 shallot chopped finely

1. Ask your Fish Monger to get your black sole ready for the pan removing all the skin and trimming the sides so it's ready for the pan.
2. Season your flour with salt and pepper. Toss the fish in the flour coating the fish well.
3.Add your olive oil to a good non stick frying pan and get it nice and hot. Place the sole in the pan and fry for 3 mins then turn over. Add the butter capers, herbs and lemon juice.
4. Now serve the sole. I suggest some new potatos and some green asparagus.
