Bacon & Chorizo Tagliatelle

Bacon & Chorizo Tagliatelle
This is a delicious dish which is quick and easy to prepare. Feel free to vary the vegetables to suit your own family tastes and sometimes i substitute the chorizo for some bacon lardons for very positive results.

Pasta Dish:
10oz/300g pasta-fresh or dried
½ tablespoon oil
4oz/110g chorizo-sliced thinly
6 rashers streaky bacon
1 ½ peppers-diced
6 mushrooms-thinly sliced
3 cloves garlic-crushed
2floz/50ml pouring cream
2oz/50g grated parmesan

marinara sauce:
3-4 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, finely sliced
2 x 400g tin whole plum tomatoes
½ tsp dried red chilli flakes
½ tsp dried oregano
Sea salt

For the marinara sauce, place a large frying pan over a medium high heat and add the oil. When it’s hot, add the onion and fry gently for 10 minutes or until softened and slightly golden. Add the garlic, chilli flakes and oregano and stir through for 1-2 minutes.
Add in the tomatoes and fill one of the tins half way up with water and add this also. Bring the contents of the pan to a steady simmer and then reduce the heat and cook for 35 minutes or until the sauce has reduced by half.

Check the seasoning before transferring the sauce to a food processor or blender. Blitz until completely smooth- Transfer the sauce to a container and set aside.

Bring a large saucepan of water to the boil.
Cook the pasta according to the packet instructions.

Meanwhile heat a wide based pan with the oil and add in the diced bacon and cook for a moment or two until it is browned slightly. Season lightly with some salt and pepper
Next add in the sliced chorizo and allow this to cook for a moment or two and allow the spice to come out of it.

Next add in the mushrooms and peppers with the garlic and continue to cook for a couple of moments until the vegetables have begun to soften.

Finally add in the sauce and the pouring cream and allow this entire mixture to come to the boil. add in the grated parmesan and the cooked pasta
Serve with some additional freshly grated parmesan and some garlic bread.
