Energy-Boosting Snacks

Former athlete Derval O'Rourke joins us this morning to share her fitness tips and also make some some healthy, and energy-boosting, snacks orange and date energy ball and cocoa and hazelnut bombs. 

Orange and Date Energy Balls

Ingredients

MAKES 8 BALLS

PREP TIME: 5 MIN

80g desiccated coconut
190g Medjool dates,
chopped
100g raisins
juice of 1 large orange
120g porridge oats
60g sunflower seeds
2 tbsp good-quality cocoa powder

 

Method

Spread the desiccated coconut on a plate and set aside.

If you have time, soak the dates and raisins in the orange juice for 15 minutes before you use them. If not, skip this step.

Place the dates, raisins, orange juice, oats, seeds and cocoa powder in a food processor and blitz until you have a sticky paste. Use your hands to shape the paste into balls roughly the size of golf balls.

Then roll each ball in the desiccated coconut until coated.

Your Orange & Date Energy Balls are ready to eat straight away.

 

Cocoa and Hazenut Bombs


This is my go-to recipe when I want a little snack with a hint of indulgence. I love eating one of these Cocoa & Hazelnut Bombs mid-morning with a cup of coffee or after dinner with a cup of tea. They are also very handy to throw in a gym bag so that you've an energy boost before your workout.

MAKES 8 BALLS

100g chopped hazelnuts
6 Medjool dates, chopped
3 tbsp maple syrup
1 tbsp ground chia
3 tsp good-quality cocoa powder
1 tsp vanilla extract

 

Method


Spread the chopped hazelnuts on a plate and set aside.

Place the dates, maple syrup, ground chia, cocoa powder and vanilla extract in a food processor and blitz until you have a sticky paste.

Use your hands to shape the paste into balls roughly the size of golf balls. Then roll each ball in the chopped hazelnuts until coated.

Your Cocoa & Hazelnut Bombs are ready to eat straight away.
