Fillet of Beef in Black Bean Sauce
Serves 4–5 | Hong Kong Classic
Tender Irish grass fed beef , crisp peppers and onions, coated in a rich black bean sauce.
Ingredients
- 400g beef fillet, thinly sliced
- 1 onion, cut into chunks
- 1 green pepper, cut into chunks
- 3 tbsp fermented black beans, rinsed
- 1 tbsp garlic, chopped
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp dark soy sauce (optional)
- 1 tbsp Shaoxing wine (or dry sherry)
- 2 tsp sugar
- 1 tbsp potato starch + 250ml water
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
Marinade
- 1 tbsp soy sauce
- 1 tsp potato starch
- ¼ tsp baking soda
Method
- Marinate the beef — Toss sliced sirloin with soy sauce, starch and baking soda. Rest 5–10 min.
- Mix the sauce — Combine soy sauces, oyster sauce, sugar and starch water in a jug.
- Sear the beef — Hot wok, oil, sear beef ~30 seconds, then remove.
- Cook aromatics & veg — Add oil, black beans, garlic, onion and pepper — toss 1 minute.
- Combine — Return beef to wok, add Shaoxing wine and sauce, toss until glossy.
- Finish — Drizzle with sesame oil. Serve with steamed jasmine rice.
