500g Chicken Wings
Two sprays of fresh rosemary
Two cloves of garlic
Too good pinches of salt
Lemon zest
Olive oil
For the sauce
2 tablespoons of sesame seeds
2 tablespoons of pumpkin seeds
4 fresh tomatoes
One pasilla chilli
One Mexican dried chilli
Two onions
Corn tortillas
Coriander
Achiote paste
Method
Start by marinating chicken in all the spices and oil. Fire up the barbecue then once the chicken is marinated place on cook nicely on the barbecue until it gets a nice colour.
For the sauce, chard tomatoes and the onions together toast the seeds and then place them into a pan along with some water the chilies the tortillas seasoning it and then blitz.
Once the wings are cooked, toss them in the sauce and then finish them on the barbecue. enjoy
