Bluefin Tuna Tartare

Bluefin Tuna Tartare, Crispy Seaweed, Pickled Daikon, Avocado Puree, Plum Sesame Mayo, Ponzu, Citrus Smoke
Serves 2
Ingredients:
- 120g Bluefin Tuna
- 6 Seaweed Crackers
- Sesame Salt
- 50g Pickled Daikon
- 28g Avocado Puree
- 10g Plum Sesame Mayo
- 28g Ponzu
- Citrus
Method:
- Freeze the tuna for 24 hours, Then defrost it and dice into 2cm Squares
- Toss the Tuna in the Sesame seasoning and set aside in a bowl.
- Lightly heat the ponzu to release the flavours.
- Arrange the Tuna in a Bowl. Then Pipe small amounts of Avocado Puree and some of the Mayo Between the Tuna.
- Poor on a small amount of ponzu and Garnish with the Crackers, Daikon and some herbs
- Add the Citrus Smoke if you have it.
