Thai Chicken Lettuce Wraps

A light yet flavourful dish featuring tender chicken, fresh veggies, and a Savory Thai-inspired sauce wrapped in crisp lettuce. These wraps are perfect for a healthy lunch or dinner!

Ingredients:

· 2 boneless, skinless chicken breasts, diced

· 1 tablespoon sesame oil

· Salt and pepper to taste

· 1 tablespoon fresh ginger, grated

· 2 garlic cloves, minced

· 1 small onion, diced

· 1 carrot, julienned

· ½ red bell pepper, diced

· ¼ cup fresh cilantro, chopped

· 2 tablespoons soy sauce

· 1 tablespoon lime juice

· 1 tablespoon honey

· 1 tablespoon rice vinegar

· 1-2 tablespoons chili paste (optional)

· 12 large lettuce leaves (such as butter or iceberg lettuce)

Instructions:

· Heat sesame oil in a large skillet over medium-high heat. Season chicken with salt and pepper.

· Cook chicken for 6-7 minutes, stirring occasionally, until golden and cooked through.

· Add ginger, garlic, and onion to the skillet and sauté for 2-3 minutes until fragrant and softened.

· Cooking time: 3 minutes

· Stir in carrots, red bell pepper, and cilantro. Cook for an additional 2 minutes until vegetables are tender.

· Sauté time: 2 minutes

· In a small bowl, whisk together soy sauce, lime juice, honey, rice vinegar, and chili paste (if using).

· Prep time: 3 minutes

· Pour the sauce over the chicken and vegetable mixture. Stir to combine and cook for 2 more minutes to heat through.

· To serve, spoon the chicken mixture into the centre of each lettuce leaf and wrap them up like a taco.
