This is perfect for January — light, high in protein, full of greens, and not heavy at all. Ideal if you’re back from the gym or just trying to eat cleaner. Big flavour, real food, and ready in under 25 minutes.
Serves 2–3
Ingredients
Honey Soy Chicken
- Chicken fillets – 500 g, sliced
- Irish honey – 40 g
- Light soy sauce – 45 g
- Rice vinegar – 15 g
- Garlic – 10 g, finely chopped
- Neutral oil – 10 g
Stir-Fried Super Greens
- Broccoli – 150 g, small florets
- Courgette – 150 g, sliced
- Spinach – 100 g
- Light soy sauce – 15 g
- Oyster sauce – 20 g
- Neutral oil – 10 g
Steamed Rice
- Jasmine rice – 200 g
- Water – 300 ml

Method
1. Cook the rice
Rinse the jasmine rice. Add to a pot with water, bring to the boil, cover and reduce to low. Cook for 12 minutes, then rest for 5 minutes and fluff.
2. Honey soy chicken
Heat oil in a pan over medium-high heat.
Add chicken and cook for 3–4 minutes until lightly golden.
Add garlic and cook for 30 seconds.
Stir in honey, soy sauce and rice vinegar.
Simmer for 2–3 minutes, tossing until sticky and glossy. Remove from pan.
3. Stir-fry the greens
Using the same pan, add oil.
Stir-fry broccoli and courgette for 2 minutes.
Add spinach, soy sauce and oyster sauce.
Toss for 30–60 seconds until just wilted and vibrant.
4. Serve
Serve the chicken with steamed rice and the stir-fried greens, spooning over any extra glaze.
