Apple and Blackberry Crumble with Vanilla Custard
Ingredients
· 1kg brambly or cooking apples
· 300g blackberries
· 3 tbs caster sugar
Crumble mix
· 150g plain flour
· 120g melted butter
· 50g porridge oats
· 80g Demerara sugar
· ¼ tsp cinnamon
Vanilla custard
300mls shop bought custard
100mls lightly whipped cream
½ tsp vanilla extract
- Softy whip the cream with a whisk, add the vanilla and fold through the custard
Method
1. Preheat the oven to 160C
2. Peel the apples and cut them into quarters, then remove the cores and slice each piece in two.
3. Put them into a pan, sprinkle with the sugar, and cook over a medium heat for about five minutes, until the apples start to soften.
4. Fold through the blackberries
5. Transfer the apple mixture to a shallow ovenproof pie dish.
6. Place the flour, oats, cinnamon and brown sugar into a bowl, now add in the melted butter, mix together, don’t worry if it clumps up a little
7. Now sprinkle over the cooked apples in the pie dish. Transfer to the oven to bake for 30 minutes or until crisp and golden-brown on top.
