Chorizo & Chicken Traybake with Baby Potatoes, Roast Veg, Creamy Ranch Dressing & Gremolata
Serves: 5 Prep Time: 20 min Cook Time: 50 min
Ingredients:
• 4/5 chicken fillets ( 8/10 thighs )
• 50g Chorizo
• 1.25kg baby potatoes ( sliced in half )
• 1 fennel bulb, sliced
• 3 peppers, sliced
• I jar olives
• Olive oil, salt, and pepper
• Fresh gremolata (finishing touch: lemon zest + parsley + garlic)
Method:
1. Rub chicken with the Nduja paste.
2. Toss vegetables and baby potatoes with olive oil, salt, and pepper; arrange on tray.
3. Place chicken on top; roast at 200°C / 390°F for 50–55 min.
4. Rest chicken, carve, plate with vegetables, and sprinkle gremolata.
